This fine rum is crafted from estate-grown sugarcane, which is harvested, crushed, and then processed to extract the rich molasses used in the fermentation process. The fermented wash is distilled in traditional copper pot stills, which impart their signature depth and character to the spirit. Appleton Estate employs a unique and meticulous ageing process, where the rum is aged for a minimum of 12 years in hand-selected oak barrels. The tropical climate of Jamaica accelerates the ageing process, imbuing the rum with a depth of flavour that is truly exceptional.     Zacapa, a world-renowned Guatemalan rum brand, crafts their exceptional 23 Gran Reserva at their distillery located in the verdant highlands of Guatemala. The rum is made using a blend of rums aged between 6 and 23 years, following a unique solera system inspired by Spanish sherry production. The spirit is derived from the first-press sugarcane juice, also known as "virgin sugar cane honey," which is fermented and distilled to create a high-quality base rum. Zacapa's ageing process takes place in a combination of ex-bourbon, ex-sherry, and ex-Pedro Ximénez wine barrels, imparting a distinctive depth of flavour and character to the rum.
